Go Fish...

Armed with the knowledge that red snapper should have been on special today at the grocery store I had planned my menu for tonight's dinner accordingly only on reaching the fish counter to find they had none at all and they weren't sure what happened to the red snapper.  That meant a quick rethink on the fish of the day so I opted for a nice looking halibut steak and then spent about 5 minutes looking for inspiration partly on the shelves and partly racking my brain.  I figured I could probably adapt my original plan for red snapper for halibut as the worst case scenario.  Then we entered the produce section and my eye lit upon some very nice looking lemongrass...which was snatched up in my mitt.  I then spent a good part of the afternoon trying to come up with a recipe idea when I found something with coconut milk and lemongrass.  Hmm only snag I have no coconut milk so I replaced the milk with chicken stock as I really didn't have a lot of alternatives.  Going to serve the whole meal up with brown rice and some steamed green beans.

I did decide to cook some chicken also in pockets for the girls and James although I plan on trying the girls with some of the fish to see how they like it.  I feel a little like I've winged it tonight and I really wish I had had some coconut milk although I'm sure my body will thank me for the lower calorie count.

Just as a quick follow up...this meal was delicious!  The girls enjoyed both the fish and meat version and even James wasn't too adverse to the fish.  The broth was a fine substitute.  My only little complaint as it were was the insipid looking chicken which could easily be rectified by a quick sear in the pan, but all in all a great low fat meal.  Oh and I dressed up the green beans with a little balsamic drizzle.
