Last night's dinner and today's lunch was cauliflower and penne pasta unfortunately, and to save a buck, I had some regular pasta on hand that needed using up rather than using whole wheat penne which is a shame, but I'm not one to throw things away if I can help it, however next time I will be buying whole wheat. I actually thought I had burnt the cauliflower at one point however much to my surprise the dish remained intact with just the burnt offering staying in the bottom of the pan.
Here's a tip...if you burn something don't stir it immediately take out the good stuff on top of it and then clean out the pan it's only burnt on the bottom if you stir it you mix in the burnt bits and flavor rendering the whole dish inedible, if you are lucky you can still salvage some of your hard work. (I watch too many cooking shows sometimes).
Oh and I have to laugh my two children are sitting in the middle of the floor humming at each other seeing who can hum longer and then laughing, such a joy. Did I mention we had another full night's sleep?!!!!
Ok back to talking about food, I have on the oven currently some dried chick peas that have soaked overnight. I will be making some chick pea patties for lunch tomorrow and I can't wait! I chose to reconstitute beans rather than buying canned just to reduce sodium. Now I know you can wash some of that off but well it's not all that hard to do em from scratch.
Dinner tonight will be coconut baked chicken and I'm not sure what I'm going to do for a sauce yet as I think the original one I used had a bit too much sodium and sugar for me (although it was tasty) I think I just need to think about it and modify it some.
