One of the best yet...

Tonight's dinner had to be one of my ultimate favorites, skillet corn fritters with grilled tomato toppers, the first of two vegetarian meals this week, and yes this week is also corn heavy but I'm not regretting it in the slightest.  I will fully confess last night's dessert to me was better today than yesterday and I have no idea why, maybe I just wasn't as full or something, anyway I enjoyed it more.  The main course was a concoction made from more creamed corn.  I love corn and I love fresh corn off the cob, there is nothing like it it grills great and so sweet, it's loved by us all.  I am loving my iron skillet also it's opened up a few more recipe ideas and allows me to do a few more different things on the grill I wouldn't have done before.  A great buy to be honest and one you can do so much with it as the last week or so I've used it on several occasions.
