Sometimes I amaze myself

There are times I am totally amazed by the meals I make, tonight's dinner was one of those wow moments.  For those that have been following me they know that this has been a week of wow's and now we are starting a new week with our first WOW!  Tonight's offering, parmesan crusted swordfish skewers, loved by us all, and the girls even ate some of the zucchini!  That they were eating the veggies amazed me for sure.  I love grilling!  The clean up is a breeze and we eat outside minimizing the clean up as well.  I will be breaking my cook out run on Monday but so far grilling is a hit and we do better with consumption as well.  Rachael Ray's magazine issue for June/July is all about the outdoors and I can tell you at the rate we are going we may end up doing every recipe in the issue.

Today I also invested in a cast iron pan, the reason for this will be apparent in the coming weeks, Matt you are going to appreciate this new addition to the family.  In addition my clay pot arrived in one piece, that means I'm all set for Monday's extravaganza.  I've started preping a little for the meal already to cut down on the amount of work I will do on the actual day, and if everything turns out as great as the little dish I've made so far we are in good shape.  The truth of the matter is Monday can't come soon enough I'm so itching to cook the menu I have planned, and the little taster I've had so far I'm looking forward to it even more.
